Pea, Fennel and Buratta Salad

Another wonderfully simple assembly only salad for the summer. It takes not effort just good ingredients. I love this as a started before supper or as a light lunch dish.
What you'll need
Serves 2 as a Starter or Side

2 Burrata
115g Shelled Peas
170g Sugar Snap Peas
¼ Fennel Bulb
3 Tbsp Garlic Olive Oil
1 Tbsp Thick Balsamic Vinegar
6 Sprigs of Dill
5 Wild Garlic Flower Heads
1 Cress Box
1 Handful of Pea Shoots

  1. Place the Burrata on the serving dish.
  2. Finely Slice the Fennel.
  3. Scatter the Fennel, Dill tops, Cress, Peas, Pea Shoots and Sugar Snap Peas over the top of the Burrata.
  4. Drizzle the Garlic Olive Oil over the top.
  5. Sprinkle the Wild Garlic Flowers all over and finish with a good amount of Smoked Salt and fresh Black Pepper.
  6. I serve the salad like this with Vinegar on the side, so that people can add it if they like.
