Perfect Oven Chips
I once had a housemate that hated the smell of frying and friers. They were (somewhat justifiably) convinced that the smell filled the whole house and was a plight on those living with a deep fat frier like myself. Now don't get me wrong I'm not obsessed with this piece of kitchen equipment I just think there are some lovely things you can make with it (for example Stuffed Zuccini Flowers). Long story short I realised my love for fries meant I had to find a way to cook them that wasn't with a deep fat frier but was delicious enough to keep me away from fast food.
Thus the perfect oven fries were created. I promise every person I have ever made these for has seen the uncooked item and responded with something along the lines of "oh no I hate oven chips they're yucky" and every one of them (including Miss Kit) has come around after eating the finished product.
What you'll need
Serves 2.
Half a bag (500g) of Oven Fries (I prefer the french fries style but its up to you)
3 tbsp Garlic Olive Oil
Generous Salt and Pepper
3 Large Crushed Garlic Cloves

- Preheat the Oven to 220ºC.
- Place the fries in a roasting pan and cover with the olive oil, salt and pepper and toss until evenly covered.
- Crust the garlic cloves in their skin with the side of a knife and toss them in too.
- Bake for 15-20mins before removing for another toss, I try and do this by shaking the pan rather than using a utensil, it helps prevent the chips from ripping.
- Bake for a further 10mins or until some of the fries are catching and all are a dark golden colour.
Top Tip
Even when the packet of fries says it takes 20mins for a total cook, don’t believe them, keep an eye on them and cook to colour not instructions.
