My Guacamole

This recipe is a family favourite. Add it to salads, the tops of jacket potatoes, open sandwiches or use as a dip with my Sour Cream and Nachos. It's great with everything! Sometimes I take out the Tomato and add freshly chopped Coriander (about a 1/4 cup) instead. This makes it so fresh and yummy! If your Avocados are a bit hard smash them alone first, that way you won't obliterate the other ingredients.
What you'll need

1 large Avocado
½ a Red Onion
1 big Tomato
1 tsp Chilli Flakes
½ a Lime, Juice

Crush it

  1. Chop the Tomato into small chunks place in a pestle and mortar.
  2. Halve the Avocado and scoop out the fruit retaining the stone on the side. Add to the pestle and mortar too.
  3. Finely chop the Red Onion and add to the mix.
  4. Use the pestle and mortar to squish the ingredients together into a chunky paste. (lumps are good!)
  5. Season with Salt and Pepper and squeeze the Lime juice in.
  6. Mix again and top with Chilli Flakes.
  7. Add the Avocado Stone to the top until ready to use (this stops the avocado going brown!).
