Recently in London it has felt like the rain would never stop. It hasn’t been a very cold winter but my goodness it has made up for it with rain.  Misty windows and wet hems of jeans are becoming the norm. I love that England has weather, and proper seasons but it has been making me crave my other love (Asia) recently. I feel at trip to Vietnam is much needed soon.

The only positive effect all the rain has had is only colour palette. I always loved grey but all those grey skies seem to have inspired me and I am wearing it more and more.  Think of me the next time you dodge a puddle, I spend my life in suede shoes doing just that!

Perfect Oven Chips

I once had a housemate that hated the smell of frying and friers. They were (somewhat justifiably) convinced that the smell filled the whole house and was a plight on those living with a deep fat frier like myself. Now don't get me wrong I'm not obsessed with this piece of kitchen equipment I just think there are some lovely things you can make with it (for example Stuffed Zuccini Flowers). Long story short I realised my love for fries meant I had to find a way to cook them that wasn't with a deep fat frier but was delicious enough to keep me away from fast food. Thus the perfect oven fries were created. I promise every person I have ever made these for has seen the uncooked item and responded with something along the lines of  "oh no I hate oven chips they're yucky" and every one of them (including Miss Kit) has come around after eating the finished product.

Chip Chip

  1. Preheat the Oven to 220ºC.
  2. Place the fries in a roasting pan and cover with the olive oil, salt and pepper and toss until evenly covered.
  3. Crust the garlic cloves in their skin with the side of a knife and toss them in too.
  4. Bake for 15-20mins before removing for another toss, I try and do this by shaking the pan rather than using a utensil, it helps prevent the chips from ripping.
  5. Bake for a further 10mins or until some of the fries are catching and all are a dark golden colour.
Top Tip

Even when the packet of fries says it takes 20mins for a total cook, don’t believe them, keep an eye on them and cook to colour not instructions.

The Banyan Tree – Maldives


Stay

As you know I love the Maldives. On my recent trip I returned to a resort I have been to before, actually B.PL (aka before peonylim.com)!  I love this little island because it’s so private and small. There are only 6 rooms (designed like luxury safari tents) on the whole island and the whole thing is wrapped in beach and reef. Every room has it’s own pool and immdieate access to the beach.

The island still has a very natural feel to it which is lovely and all the staff are charming and very discreet.  This is the perfect resort for the private person, if you don’t want to see anyone for your whole trip.  I spent my days, reading, sunbathing, swimming, walking the beach endlessly beach combing and looking for sea turtles.  There was a lovely little chap that came at lunchtime like clock work to say hello. His little head popping above the water.

Sadly from what I could tell looking at the Banyan Tree website this resort (Madivaru) is now closed, so I literally revisited in the nick of time.

However there are always new resorts to be found in the Maldives, so let me know if you have any recommendations!
