Cucumber Coconut Smoothie


This cucumber and coconut smoothie is a great healthy treat. I love to make one in the afternoon instead of a snack. You can buy pure coconut water or milk pops like I have used or simply freeze fresh coconut water into ice cubes to use in smoothies.

What you'll need
Makes one large portion

½ Cucumber
3 Springs of Mint
1 Coconut Ice Push Pop or 1 Frozen cup of Coconut Water
1 inch piece of peeled Ginger sliced
1 cup of Ice


And then blitz

  1. Add all the ingredients to the blender and blitz.
  2. Shake the jar to make sure all the juicy bits have made it to the blender blade.
  3. I blitz three times for 1 mixture each time.
