The Vedema Resort is set in the hills above the black sand beaches of Santorini, among the grapevines. The resort is a large part of a small winemaking town, all the buildings are the classic white you would expect of Santorini and you can see the blue dome tops of churches in the town from the pool. The fish only restaurant was lovely for supper, as you can eat on a roof top with the twinkling lights, even if your not staying here it is worth coming for supper one night. We also ate in the town a couple of nights in a sweet open air terrace which was really fun. Pool side snack were classic and I loved the small but generous breakfast buffet every morning. I found all the staff warm and helpful. All in all a great relaxed family spot.

Some outfits are always perfect. Neither based on trends or fads, nor seasonal or dateable aesthetics. Never imposing or overly formal, nor disrespectfully casual. This is one of those outfits. I have owned this dress for over 10 years, it’s still in-style and it still will be in another 10. It’s a total classic. People are quite down on all black outfits, suggesting that they aren’t imaginative enough. I just don’t agree, every outfit is different.  I loved my black neoprene smock dress I wore during LFW too, because even though the whole outfit was black it had so much personality and humour. Wearing black only makes you boring if you’re not imaginative about how you wear it.

Peanut Butter Chocolate French Silk Pie

This pie is an alternative to my Chocolate French Silk Pie. If your a fan of salty and sweet this will be up your street. It's totally addictive! My mother and I can devour an entire pie together. The textures are wonderful; crunchy, smooth and crumbly. I love both pies, so I tend to choose which one to make based on what it is following, if the main course is salty then don't do this version. This version goes best after a sweeter main course. Although I happily enjoy a slice with cup to tea too!

Add Chocolate Filling

  1. Cream the Butter and Sugar until pale and fluffy.
  2. Melt the Chocolate (I use a microwave to do this, at 30sec intervals stirring in-between).
  3. Add the melted Chocolate and Vanilla to the butter cream and mix well.
  4. Add one Egg at a time to the mix, making sure to blend very throughly on medium/fast before adding the next. I allow 5 mins per egg. Time this to be sure.
  5. Pour into the refrigerated crust and cling film (try not to let the cling film touch the top, I did a little here and you can see it takes away the gloss top when you pull it off, which doesn’t matter if you want to cover the top in cream but if you want to allow some to show it won’t be as pretty).
  6. Refridgerate for at least 4 hours.

For the Peanut Cream

  1. Using an electric mixer, blend the Cream Cheese and Peanut Butter till smooth.
  2. Add the Cream little by little beating in-between until totally incorporated.

To decorate

Use the Peanut Cream, chopped Peanuts and Cocoa to decorate the top in anyway you like.  The Cream is strong enough to hold shapes if you want to pipe it, but I like this more relaxed look best.
