Cucumber Coconut Smoothie
This cucumber and coconut smoothie is a great healthy treat. I love to make one in the afternoon instead of a snack. You can buy pure coconut water or milk pops like I have used or simply freeze fresh coconut water into ice cubes to use in smoothies.
What you'll need
Makes one large portion
½ Cucumber
3 Springs of Mint
1 Coconut Ice Push Pop or 1 Frozen cup of Coconut Water
1 inch piece of peeled Ginger sliced
1 cup of Ice

And then blitz
- Add all the ingredients to the blender and blitz.
- Shake the jar to make sure all the juicy bits have made it to the blender blade.
- I blitz three times for 1 mixture each time.

Pour the thick smoothie into a large glass and top it off with mint leave and a straw.
