Chocolate Cream and Raspberry Swiss Roll

This is a great recipe to try over the weekend, it works just as well as a pudding, as a cake for tea.  The filling can have loads of options, so just use what you have the berries you love.

  1. Preheat the oven to 220, line a baking tray (13 x9″) with non stick parchment.
  2. Whisk the eggs and sugar until the mixture is light and frothy and the whisk leaves a trail when lifted.
  3. Sift the flour and cocoa and add to the egg mixture, fold it in making sure not to knock the air out of the eggs.
  4. Pour the mixture into the baking tray and tilt the tray to make the mixture spread evenly. As the mixture has no fat in, it wont spread out and even in the oven so make it as even without flattening it at this stage.
  5. Bake for 10 minutes or until the sponge begins to shirk from the edges and is slightly springy to the touch.
  6. Lay out a piece of parchment or a dish cloth and sift cocoa onto it.  Invert the cake onto it and then peal the parchment of the bottom carefully.
  7. Gently mark (but don’t cut) the a line along the short side of the cake about an inch in from the end. This will help you to roll when you have the filling is on the top.
  8. Mix the cream with the sifted icing sugar and whisk until it is soft peaks (remember the cream will continue to stiffen after you stop whisking so don’t over whisk).
  9. If using a compote, spread it on the cake now. I think its particularly nice to make the cake a bit wet with it. If your using fresh berries, slice them so that they will lie flat on the cake.
  10. Spread the cream across the cooled cake and then sprinkle with the berries (if using fresh berries).
  11. Now roll the cake up.  It’s really about being brave and firm, the cake is quite strong so don’t be afraid of it!  Take the parchment the end of the cake that you marked with a knife. This will form the centre of the roll, be firm and push it around into the centre supporting it with the parchment. Make sure the end is tucked firmly in and then continue a tight roll.  If you need more help with this and check out this super cute patterned roll video by Dulce Delight

I think when you start your career in any industry, there is a period for everyone when it feels like your not getting anywhere. We have all been there. I know when I started blogging, I had no idea where it would go or what it could lead to. I didn't have a huge plan, I just wanted a creative outlet and so it was something fun to do. If you go back to the very beginning of my archive you will see I just wrote about what I liked or was inspired by, there was no method.

I think the first time that you realise your getting somewhere is when you can help someone else out in the industry. One of the first people that asked me to do that was Isolda London.  At the time they were only producing jewellery and Ale (the designer) was still in college. I still remember meeting them for the first time. We were all babies in the industry and we helped each other. When they started to produce clothes, I shot their first collection it was because I wanted to, not because they paid me or gave me anything. I think its so important that young untested talent supports each other. Thats what Isolda and I did.

A few years down the road and they have had a showroom at Paris Fashion Week, are stocked in Bon Marché and Moda Operandi and have been all over the press.

I like to think that I helped with that a little and there is nothing more rewarding then that.

They are some of the hardest working and kindest people I have ever had the pleasure to work with and I hope we will work together for the rest of our careers.

This has to be one of my favourite looks from Paris.  Firstly, I am wearing my new hat from Bon Marche. Secondly, I love this coat, and these pants, well just everything really! I really just have to gush about how much I love these pieces individually. It’s not even about the whole look, I love all the elements as well. I hope you do too.
