Stubbs and Wootton is my favourite flat shoe shop in NYC.  I always have to stop in when I'm in town. They have men's and women's collections with new pieces every season and offer custom made options. Above are photos of the NYC shop and the pairs I own. The tapestry ones are perfect for summer and so comfortable because they give to the shape of your foot. I made the mistake once of buying a velvet pair half a size too small, thinking they would give, they don't! Get the right size though and you will live in them.

They do have an online store and are now stocking with browns and mrporter, however beware import tax can make them expensive online, the best price is always in store.

Chicken, Ginger and Mayonnaise Fingers

This is a Lim family classic tea party favourite.  We have been making them for years and I’m still not bored of them.  It’s an unusual flavour combination, that’s sweet, sour and savoury.  You can use regular Mayonnaise or home-made and it will be delicious too.

Building the Sandwich

  1. Butter the white bread with salted butter.
  2. Layer Kewpie Mayonnaise on one side of the sandwich bread and then sprinkle a few pieces of dill on the top.
  3. On the other piece of bread, cover it with a single layer of pickled ginger  and then the sliced chicken with a sprinkle of white pepper.
  4. Place the sandwich together and light press it down. Cut the crusts off and then cut them into fingers.

Now hollow your loaf

I like to present them in a hollowed out loaf. Make the breadcrumbs with the spare bread and keep them in the freezer for future recipes.

  1. Cut the top inch off the loaf in one piece.
  2. Then slice a square into the top of the open loaf leaving an inch boarder around the crust.
  3. Slice the white middle of the loaf to make it easier to pull out (this is what you will make breadcrumbs out of).
  4. The sliced fingers should now fit perfectly into the loaf.
