Twice Baked Potatoes

SavourySidesStarters
AKA Super Stuffed Potato Skins! These potatoes will disappear as soon as they come out of your oven. They are wonderful for lunch and as a side with a  casual supper, but make them out of new potatoes for a fun party food. I have made them along side my Stuffed Sweet Potatoes here.
1

Potato Stuffing

  1. Preheat the oven 200ºC.
  2. I put a bbq skewer through the Potatoes to speed up the cook time. Bake for 30-40mins.
  3. Fry the Bacon and leave to drain on paper towel.
  4. Take the potatoes from the oven and cut them in half. Scoop out the centres into a bowl.
  5. Use a fork to beat into the potato flesh with the Butter, Cream Cheese, Salt, Pepper and Chives.
  6. Spoon the mix back into the skins, then sprinkle with Bacon and Cheese.
  7. Place under the grill for another 10 mins until hot and the cheese is golden brown.

I’m so sorry if this has inconvenienced you. I have been working on a new look for the site and so it’s had to be down to allow progress.

I have been selling pieces privately via email, so please feel free to get in touch if your looking to buy something.

Goats Cheese Stuffed Sweet Potato

SavourySides

This stupidly simple recipe is always a winner.  You can throw it together in 30mins (as sweet potatoes cook much faster than regular ones) and it goes perfectly with BBQ food (get some BBQ ideas here) and travels well, staying warm for picnics.

Nutmeg is also a great addition, just pop it in with the salt and pepper.

The other potatoes featured here are Twice Baked Potatoes.

1

Baking the Potatoes

  1. Preheat the oven to 180ºC.
  2. Line a baking sheet (the sweet potatoes tend to ooze as they cook so it makes it easier to clean up afterwards).
  3. Place the raw potatoes into the oven and cook for 20mins.
  4. Remove the hot potatoes from the oven and cut a slit down the middle of each one. (They will be very hot inside, so before you begin let the steam come out so you don’t burn your fingers).
  5. Using a fork fluff up the inside, then add 1/5 of the Butter, Salt and Pepper and then continue fluffing to mix it in.
  6. Taking 1/5 of the Goats Cheese log, stuff the open top of the potato, get as much cheese in as you can. Then season the top with Salt and Pepper again.
  7. Return to the oven for a further 10-15mins (I use a grill to colour the top during this cook).
