The PS Cafe chain in Singapore is a must visit when in town. I first visited the Paragon branch over 10 years ago, since then the brand has expanded across the city, much to the many fans delight.

PS Cafe Palais

PS Cafe is a fusion cafe chain in the best sense. Fusing Asian treats like soft shell crab with truffle fries, stunning sandwiches with custom bread choices, delicious pasta and soups. Not only food, but the drinks menu is so exciting I always spend half my time choosing what tipple to have. The cakes are delicious and with a tropical theme but a Australian American in structure. They have a huge selection of magazines which you can borrow while you enjoy your food. I grab every Donna Hay, US and French Vogue in sight and snuggle down for a couple of hours. It’s a fabulous way to spend an afternoon.

The Palais Renaissance branch featured here, is in a conservatory with glass making up two sides of the location and an outer terrace, it’s a lovely natural light filled room with double ceiling height, grab a booth by the window for maximum comfort. The food order in these photos includes the turkey melt on pumpkin seed bread, the soft shell crab club, truffle fries, white wine spritzer and a homemade cucumber and mint soda.

I have been visiting the city my whole life and I love it like home. It’s a foodies dream and in more recent years the cultural landscape of the city has really flourished. There are some wonderful gardens and museums to visit now too.

A few days ago I began a wardrobe detox. In the new year I always try and start by clearing out my life, from fridge to car. I realised when I was looking through my clothes that I almost never buy anything full price now. I’m such a specific shopper, I rarely buy anything on a whim, so I normally have time to do a little research and decide where or how to buy something. By shopping online sales, at discount stores, on Vestiaire Collective, at designer outlets like Bicester Village or using discount codes I make sure I get a good price. I bought this jacket from Bicester Village a year or so ago and it fits like a glove.

Corn and Turkey Burgers with Zatar Yoghurt

Post-Christmas I find I just can't get enough of Turkey. I always think it is such a shame that I only eat the full spread once a year. Normally after the rush there are loads of great deals on Turkey Meat, so it is well worth buying it and keeping it in the freezer for future feasts. You can buy the whole bird and joint and mince it for ease and space saving. I love to make these burgers with the mince.

For the Burgers

  1. Take the Turkey Mince and Egg and combine in a bowl with your hands.
  2. Then add the Sweetcorn, Spring Onions, Coriander, Garlic, Cumin and finally the Salt and Pepper.
  3. Mix well, again with your hands. The mix should be so full of sweetcorn and herbs that it only just stays together.
  4. Using your hands shape the meat into 9 torpedo shaped burgers and press them slight flat and then set them aside in a baking tray ready to fry.
  5. Preheat your oven to 180ºC.
  6. Take a non-stick pan over a medium heat and add butter and olive oil (tbsp each). Fry around 4 burgers at a time, until the colour of the outside is a lovely rich golden colour. This should take 5 mins on each side.
  7. Return all the fried burgers to the baking tray and place in the oven for 20mins while you make your Yoghurt and salad.

For the Zatar Yogurt

  1. Blend the Yoghurts together with a spoon until smooth.
  2. Add the lemon juice and spices and mix well.
  3. Season further to taste.
  4. Finally pour on the Olive Oil and stir very lightly.
  5. Serve alongside the burgers, straight away with your choice of salad and bread.

I recommend eating these with a tomato salad like my Tomato, Chilli and Pepper Salad and Green Salad with only Lemon and Olive Oil as a dressing and plenty of chopped herbs atop. For Bread try seeded loaves that include pumpkin seeds.
