Shooting content for this site can create amazing experiences. I get to go to beautiful locations and make things I imagine a reality. It’s the best part of my job. However there are also moments that the images I share with you afterwards can never represent. Shooting this look was one of those times. We arrived at this bridge to find a queue of asian brides and grooms waiting to take their wedding photos at this location. Alone and in pink floor length tulle, I looked like a bride who had been stood up! It was hilarious.

Pea, Asparagus and Courgette Salad

This alternative green salad is full of fresh and vibrant flavours. It looks lovely and works wonderfully as both a side salad or a starter. I love it with Salmon or Lamb.

Slice, Dice and Combine

  1. Using a broad vegetable peeler (I use this Joseph Joseph one as it has a thicker cut which is perfect for salads) peel the Asparagus and mini Courgette into a large bowl.
  2. Then using either the julienne or spiralise the large Courgette into noodles and add it to the bowl.
  3. Finely slice the Fennel and add it to the bowl along with the Peas, and Capers, Lemon Juice and Zest, Salt and Pepper and Olive Oil.
  4. Finely chop the Tarragon (leaves not stalks) and Chives, then add to the bowl along with the crumbled Feta.
  5. Toss the Salad throughly and serve with a little extra Olive Oil drizzled on top.
