Purple Haze

I think I love Wisteria like most people love Cherry Blossom. Every year when they flower, I am overwhelmed by their voluptuous beauty and energy for growth. This year the purple flowers hung so heavy they touched the ground. I took these photos during lockdown.  I didnt have very many clothes with me so I borrowed some pieces from my mother (the hat, top and bag).

Learning to Walk

Learning to walk seems to be harder than I imagined. There’s a lot of getting up again after you fall. It’s amazing really that we don’t retain more of that infant blind belief in conquering things we fail at on the first attempt. Imagine if we went after everything in our lives with the persistence and cheerful bounce back that babies apply to learning to walk. Food for thought. The world could be our oyster.

Watching a baby learn how to walk has got to be one of the cutest and most terrifying things to behold. Although the takeaway is surely that the only way to succeed is to try and try again. When you stumble, when you fall, when it hurts… to continue, to persevere, to believe that the goal is always achievable. The only person that needs to believe in you, is you.

These are the simple messages of childhood that are so easy to forget. A little confidence chipped away here, a little confidence knocked there. Apparently it takes ten times as many positives to erase a negative. I hope I give people more positives than negatives in that ratio. It’s something worth thinking about before any of us gives ‘constructive criticism’ or just down right trolls someone in the virtual or real world. Does that negativity really need an outlet? Isn’t it better to lift each other up? Would you want to someone to say that to you? Am I spreading love or hate?

I’ve never left a single negative comment on a post, gram or anything else. I dont intend to. Ever. It’s just not for me.

I think it is the responsibility of every single one of us to create a world (virtually and IRL) that  is better. More positive, inclusive and more hopeful for the next generation.

Rhubarb and Custard Ice Cream

This is a super fast cheats recipe. It’s also a great way to use up spare Rhubarb too!

For the Rhubarb

  1. Prepare your Rhubarb as per my Poached Rhubarb recipe.
  2. Preheat your own to 75°C
  3. Wash your Rhubarb and cut it into 5cm sections.
  4. Lay them out in a baking tray large enough that they don’t overlap.
  5. Add the Spices, Juice and Vanilla to the tray.
  6. Bake for 45mins to an hour.
  7. The Rhubarb is done when it is soft to the touch but doesn’t break up. Bare in mind that it will continue to cook after you remove it from the oven, so slightly undercook it.
  8. Allow to cool.

For the Ice Cream

  1. If you have an Ice Cream Machine prepare it for use. If not use a metal bowl in your mixer, prepare it by placing it in the freezer to cool.
  2. Add the Custard to the Machine and start the machine, allow it to run until it has thickened to a soft serve texture. Then add half the Rhubarb and stir through.  Serve Immediately with extra Rhubarb and the cooking juice.
  3. OR if using a frozen bowl… beat with a mixer to begin to cool and whip it. Then return to the freezer for a further half an hour. Repeat the beating and freezing until you have a soft serve texture. Then add half the Rhubarb and stir through. Serve Immediately with extra Rhubarb and the cooking juice.
