Apple, Onion and Goat’s Cheese Tart

This is great snack to make when friends arrive unexpectedly. Most people have some apples, onions and cheese in the fridge and a bit of frozen pastry. If you only have shortcrust make the tart in a tin instead and blind bake the pastry until golden brown before adding the toppings and returning to the oven for the final bake.

 

  1. Preheat the Oven to 200ºC
  2. Soften the sliced onions in the butter over a very low flame, don’t allow them to colour, just soften and become flexible. Then mix in the apples and remove from the heat.
  3. Place the rolled pastry rectangle on the a non stick baking tray and spread the onion marmalade across it, leaving an inch and half boarder around the edge.
  4. Then arrange the apples over this, I did rows but any pretty pattern is fab. Sprinkle the remaining onion and butter mix from the pan over them and then lumps of goats cheese, finish with the sprigs of thyme and season with salt and pepper.
  5. Bake for 25mins or until the pastry is puffed and the toppings are beginning to golden brown.
  6. Slice into fingers and serve with ice tea as a snack or a rocket salad for lunch.

Here I have baked it alongside a Fig and Violet Tart (using the other half of the pastry). You could make a full size tart using the whole pack and doubling the other quantities but its fun to make to different tarts and have some choices for your guests.  Another yummy alternative for the other half of pastry is some little Millefeuille.

On the last day of London I wore one of my favourite outfits and we finally had some decent weather, so out came my sunglasses and my buddy Frances!  I have to say after the ankle debacle I was relieved to have London over and bit of rest before Paris. Paris is always the most fun. It’s a bit like the last week at school before holidays!

Thumbelina and me have a lot of conversations, as you would expect I would with my co-worker and best friend! In one such conversation she suggested that it might be nice for her to see what all this fashion week business is all about (given that she has to go and stay with my parents during my fashion month travels, she knows something is up).
