Apple, Onion and Goat’s Cheese Tart

- Preheat the Oven to 200ºC
- Soften the sliced onions in the butter over a very low flame, don’t allow them to colour, just soften and become flexible. Then mix in the apples and remove from the heat.
- Place the rolled pastry rectangle on the a non stick baking tray and spread the onion marmalade across it, leaving an inch and half boarder around the edge.
- Then arrange the apples over this, I did rows but any pretty pattern is fab. Sprinkle the remaining onion and butter mix from the pan over them and then lumps of goats cheese, finish with the sprigs of thyme and season with salt and pepper.
- Bake for 25mins or until the pastry is puffed and the toppings are beginning to golden brown.
- Slice into fingers and serve with ice tea as a snack or a rocket salad for lunch.

Here I have baked it alongside a Fig and Violet Tart (using the other half of the pastry). You could make a full size tart using the whole pack and doubling the other quantities but its fun to make to different tarts and have some choices for your guests. Another yummy alternative for the other half of pastry is some little Millefeuille.
