Purple Kale Pesto

Kale is having its moment.  This pesto works wonderfully used in a myriad of ways. Below I have served it with pasta in two styles, with tomatoes or a poached egg, but you can used it in tarts, on toast, as a dressing... really in anyway you can think of!

For the Pesto

  1. Using a food processor, blitz the Kale and Herbs until ruffly chopped.
  2. Add the Olive Oil, Pine Nuts and blitz until it becomes a smooth chunky paste.
  3. Now stir in the Cheese and Salt and Pepper to taste.
  4. The pesto can be kept in the fridge for a week.

Serving with Pasta

  1. Cook your Pasta and then drain, retaining 1/4 cup of water in the pan.
  2. Add the Pesto to the pan (a generous tbsp per person) and stir, meanwhile add your tomatoes to the side of the pan to cook.
  3. Serve with the tomatoes on top.

Pandan and Banana Bundt Cake with Coconut Cream

I have wonderful childhood memories of pandan birthday cakes during summer holidays in Asia. It was a delicious regional treat that my family savoured. In good Asia supermarkets you can now get pandan leaves sometimes, but if thats tricky I found a good food favour on Amazon.

Cake

  1. Preheat your oven to 180°C.
  2. Mix together the Flour, Baking Powder and Sugar in a bowl.
  3. In another bowl smash the Banana and then add the Egg Yolks, Pandan, Vanilla, and Water. Stir until smooth.
  4. Combine the wet and dry bowls, and stir until incorporated.
  5. Using an electric whisk, beat the Egg Whites until stiff peaks (and you can hold it upside down over your head!).
  6. Take 1/3 of the egg whites and fold into the free pandan mix to loosen it up.
  7. Then add the two mixes together and fold until well incorporated but not over mixed, you need those bubbles for the light texture!
  8. Bake for 40mins or until golden and a screuer comes out clean.
  9. Allow to cool on a rack inside the tin.

Decorate

I read about how to make this cream and though it sounded lovely – it is. You need to find the highest percentage of Coconut Extract you can for it to work best. I have left a little water in the milk here to get a looser whip.

  1. Scrape the Milk out of the tin, leaving the water in the bottom.
  2. Add the Vanilla and Sugar to the Milk.
  3. Using a whisk beat the Milk until light and fluffy, this will take about 3 mins.
  4. Dolop the cream on the top of the cake letting it spill over the inside and out.
  5. Decorate with lengthways slices of banana and curls of coconut.

The Peony Lim Shop is finally back! After months of work we are ready to welcome you over to shop to your heart’s galore.

During last Fashion Week you might remember I was photographed by Phil Oh for  Vogue wearing a new Peony Lim Smock, the neoprene smock dress. At the time a lot of people were asking me where they could buy the dress, but the new eshop wasn’t ready. Finally we are live and the dress is available to custom order!  This look has since been Vogue and The Cut’s Best Dressed lists of 2014.

 

The Shop can now be found on the main menu (where the CLOSET used to be), while The Closet has been moved to the header. The Shop has a new seasonal look, I hope you will be inspired by the first winter look. The Lookbook feature is a lovely new addition to the shop, I have created a series of editorials based around the season’s key products. Along with my classic line of Smocks, the shop also offers custom order pieces and a new winter pure wool collection.

 

It’s my intention to make timeless classics based around my family’s aesthetic. Pieces worn by my grandmother, mother and myself. Pieces that last longer than a lifetime, more like three! I hope with this new store you will be able to enjoy a much wider selection of pieces and a great service.
