Roast Garlic Bread

SavourySavoury Bakes

Friends who eat my cooking a lot, told me upon trying this bread, that it was the best thing I have baked for a while. I cheat with a bread mix but obviously you can make a bread dough from your own recipe if you like. If you like my bread board I got it from Etsy.

1
  1. Preheat the oven to 180°C.
  2. In the bread tin (that you will bake your bread in) place the whole unpeeled Garlic bulb along with a generous drizzle of Olive Oil. Bake while you prep your dough.
  3. Meanwhile make the Bread Dough according to the bread dough instructions. I use a Kenwood mixer with a dough hook for the first knead, allow it to rest for 15mins and then hand knead to get to this stage.
  4. By hand stretch the dough into a flat rectangle the width of the bread tin.
  5. Remove the Garlic from the oven, cut off at the root end to expose all the cloves inside.  Squeeze them out, they should be all soft and buttery. Place all the cloves of Garlic in rows about an inch apart on top the dough.
  6. Turn the oven up to 220°C.
  7. Roll the dough up like a swiss roll.
  8. Now brush the Oil left in the bread tin from the garlic up and around the tin to grease it. Then place the dough inside with the end on the bottom.
  9. Place a damp cloth over the tin and leave in a warm place for about 30-40mins.
  10. The dough will then have risen. Cut the sprigs off the top of the Rosemary, and poke them into the top of the loaf in a pattern (or randomly as I did). Then sprinkle the Smoked Salt over the top helping it to settle around the rosemary.
  11. Bake the bread for 30-40mins or until a rich golden colour and hollow sounding to the tap.
  12. Remove the bread from the oven and brush with Garlic Olive Oil, then allow it to cool.

Serve in thick slices with butter or toasted with more Garlic Olive Oil.

Gran Meliá Don Pepe, Marbella

Stay

I haven’t been to Marbella for years and years till this summer.

The last time I was in Marbella was over 10 years ago. I was doing a road trip through Spain and I stopped there for a couple of days for some pool time. I remember the food being good and the sun being hot but that’s about it.

This time I was in Spain for a friends wedding, a wonderful reason to travel. I thought it seemed silly not to enjoy a few days of sun while I was in town. So I flopped by the pool of the Gran Meliá Don Pepe for a week. I haven’t stayed in a big coastal hotel like this for a while. I forgot how pleasant it is to walk from a hotel to a public beach and into town for supper. We had a lovely supper in Orange Square one night. The hotel had the feeling of a holiday institution. Where families return year after year, and the poolside manager knows everyones name. In a funny way it reminded me of the hotel in Dirty Dancing, as one evening we came into the bar of the hotel to find couples slow dancing to jazz. It was a lovely relaxed atmosphere but still with a smiley service style. Although the hotel itself isn’t the most beautiful building, the gardens are large and rooms with views across the gardens, pool and down to the beach allow you to enjoy lovely breakfasts on your own terrace every morning. We really liked sitting in the sun and eating our pastries. The food in general is tasty, fresh and a good balance of regional and international. All in all it was an easy trip of relaxing and eating. Although in general I tend to travel more to Italy and France than Spain, it was lovely to have a change.
