Normally by this time of year the weather in London is sunny and spring like. We have had a couple of days like that but broadly speaking its cold. Unseasonably cold.  So the transeasonal clothes are coming into their own.  In the midst of this weather I couldn't help but treat myself to a new pair of boots. They really do cheer me up every time I wear them, regardless of the silly weather.  I do understand that if you live in a country with consistent weather you will think I'm very english/odd for my obsession with the weather.  Anyone living in London will understand its a constant point of interest.

The Ultimate Grilled Cheese Sandwich

These sandwiches are the enemy to any diet. They are pure deliciousness and not a recipe to be shy with. The important thing is to include at all times, more butter, mayonnaise and cheese than you think you should! I’m not joking, go all out.  I also like to serve them as canapés with drinks or nibbles at brunch parties.

For One

  1. Spread the slices of bread with mayonnaise and be generous.
  2. Layer one kind of cheese then the ham, and finally the other kind of cheese.
  3. Press the top slice down on the ham and cheese to make sure they stay together, be firm but not ruff.
  4. Melt a tbsp of butter in a frying pan until the butter is bubbling but not colouring.
  5. Place the sandwich in the pan on top of the butter and turn it in a circle to make sure the butter covers the whole sandwich and then press down lightly.  Fry for 5 mins on a low/medium heat or until you can see the cheese is melting on the bottom slice and the bread is golden brown.
  6. Now you need to flip the sandwich. You need to add the second tbsp of butter to the pan in between.  If your a nervous flipper, turn the sandwich onto a plate and then slide it off back into the frying pan, adding the butter in between.
  7. Turn and press the sandwich down again and repeat the 5 mins fry time.
  8. When all the cheese is melted and beginning to ooze out the sides when prodded its ready.
  9. Slice the sandwiches in half and eat straight away.

As a Canapé or Nibble

  1. Cut the crusts off and then cut the sandwiches into four.
  2. Grate more cheese and place a generous pinch on the top of each quarter, and then salt and pepper.
  3. Grill the quarters on a nonstick tray in the oven for 5 mins or until the cheese is beginning to colour.
  4. Top them off with fried quails eggs (and a drop of truffle oil if your feeling really decadent!). Making a homage to a mini croque madam!
Top Tip

For advanced party planning these can be cooked to the point of readiness for the oven grill a day or two before and kept ready to be reheated on the day. Trust me they are a real crowd pleaser.

I haven't always lived in London. Before I had a base here I stayed in a lot of hotels, which means I know London hotels pretty well. The Sanderson is a very London hotel. It screams we are home to Tracy Emin, Oasis and the scone all at the same time.

I was lucky enough to visit again recently,working on a project with Michael Kors. The fabulous Mr Kors came to London for Vogue Festival, and to host the most wonderful dinner which I attended (see my outfit here!). While he was in town it only made sense to celebrate by playing dress up. You might remember I did something similar for FNO (see here!). Plus I got a chance to wear and promote the World Food Programe Watch Michael Kors is launching. So I know we are all totally sold on the Michael Kors watches from a stylistic persepective, they are amaze! But now you can feel good about your purchase too.  These two watches (you see me wearing in Steel and Gold) are in support of WFP and every watch sold buys 100 meals for children in huger-stricken areas of the world.

I got a chance to run around the Sanderson, road testing the hotel in Michael Kors clothes!   Everything from the best room to the fabulous Mad Hatter’s Tea Party. Although I knew the hotel was super cool, I never realised how amazing the outdoor spaces are.  Well worth a visit for just them and famous lip sofa.
