Pea, Fennel and Buratta Salad
Another wonderfully simple assembly only salad for the summer. It takes not effort just good ingredients. I love this as a started before supper or as a light lunch dish.
What you'll need
Serves 2 as a Starter or Side
2 Burrata
115g Shelled Peas
170g Sugar Snap Peas
¼ Fennel Bulb
3 Tbsp Garlic Olive Oil
1 Tbsp Thick Balsamic Vinegar
6 Sprigs of Dill
5 Wild Garlic Flower Heads
1 Cress Box
1 Handful of Pea Shoots

- Place the Burrata on the serving dish.
- Finely Slice the Fennel.
- Scatter the Fennel, Dill tops, Cress, Peas, Pea Shoots and Sugar Snap Peas over the top of the Burrata.
- Drizzle the Garlic Olive Oil over the top.
- Sprinkle the Wild Garlic Flowers all over and finish with a good amount of Smoked Salt and fresh Black Pepper.
- I serve the salad like this with Vinegar on the side, so that people can add it if they like.
