Black Rice Goodness Bowl
This healthy and delicious bowl will fill you up all day. Continuing my one person bites series, this works wonderfully well for a solo lunch. Add your own layers, protein and seeds and nuts to customise this dish perfectly for you. Wild rice is so good for you. I try and get as many different grains for lunch during the week.
What you'll need
Make one delicious portion
One Packet of Black Rice or 1 Cup cooked fresh
3 Rashes of Bacon
¼ Cup of Pomegranate
¼ Cup of Feta, crumbled
Generous bunch of Herbs, Parsley and Dill
1 Spring Onion, finely chopped
1 tsp Za’atar
For the dressing
2 Tbsp Olive Oil
2 tsp Pomegranate Molasses
1 tsp Za’atar
Salt and Pepper

Fill your Bowl
- Make the dressing by combining the Olive Oil, Pomegranate Molasses, Salt and Pepper, and Za’atar.
- Microwave the Rice and then combine with the dressing. The heat makes the flavours come out more.
- Chop the Herbs and layer them across the rice, followed by the crumbled Cheese, Pomegranate and Bacon.
- Finish with another sprinkle of Za’atar (and nuts and seeds if you want).
