Elderflower Granita

Cold PuddingSweet
This recipe is really old-fashioned.  It can be used to make chunky crystallised ice or light and flaky granita. Simply stir the mix in the freezer less to make the chunks (every 4 hrs). It's light and delicious, the perfect palette cleanser or summer treat.
What you'll need

850ml Water
100g Sugar
175ml Lemon Juice
2 Tbsp grated Lemon zest
25g Dried Elderflowers (you need about three times this fresh to dry)

  2. Boil for 5 mins, then add the Lemon Juice and Zest.
  3. Tie the Dried Elderflowers in muslin and submerge in the mixture on the heat for 5 mins.
  4. Remove from the pan and cool, lifting out the muslin and squeezing the liquid out.
  5. Pour the mixture into a freezable container and freeze, stirring ever 2 hours to create the crystals.
