Black Rice Goodness Bowl

This healthy and delicious bowl will fill you up all day. Continuing my one person bites series, this works wonderfully well for a solo lunch. Add your own layers, protein and seeds and nuts to customise this dish perfectly for you. Wild rice is so good for you. I try and get as many different grains for lunch during the week.
What you'll need
Make one delicious portion

One Packet of Black Rice or 1 Cup cooked fresh
3 Rashes of Bacon
¼ Cup of Pomegranate
¼ Cup of Feta, crumbled
Generous bunch of Herbs, Parsley and Dill
1 Spring Onion, finely chopped
1 tsp Za’atar

For the dressing

2 Tbsp Olive Oil
2 tsp Pomegranate Molasses
1 tsp Za’atar
Salt and Pepper

Fill your Bowl

  1. Make the dressing by combining the Olive Oil, Pomegranate Molasses, Salt and Pepper, and Za’atar.
  2. Microwave the Rice and then combine with the dressing. The heat makes the flavours come out more.
  3. Chop the Herbs and layer them across the rice, followed by the crumbled Cheese, Pomegranate and Bacon.
  4. Finish with another sprinkle of Za’atar (and nuts and seeds if you want).
